The history of our products
The history of air-dried beef was unrecorded for a long time. The geographical situation of Graubünden is certainly favourable; otherwise it would not be known as the holiday corner of Switzerland. The high altitude, combined with little precipitation and dry air, provide its residents with ideal conditions for drying food as a means of preservation. This tradition has been handed down and improved from one generation to the next. As the tourist industry grew, more and more people began to enjoy air-dried Graubünden specialities. Gradually the taste of these products became as important as their keeping qualities. It is still true however that our Graubünden specialties are noted for their naturalness and tradition. The Albert Spiess AG sees itself as the keeper of these ancient practices. To us, tradition does not mean keeping everything the same, but rather keeping up with new developments and demands and putting them into practice where it makes sense. Our goal is always to provide our customers with the very best Graubünden specialities.
